There are 3 types of gum base uesd for Jell/gummy making.
- Pectin
Pectin occurs naturally in the cell walls of fruits and vegetables and gives them structure. Some fruits, like apples and quince, and the rinds, seeds, and membranes of citrus are naturally very high in pectin. Commercial pectins are usually made from citrus rinds.
It require less machine than others
It’s the highest cost gum than others
If you are force or high-end market or vegetarian it may fit you the most !
- Gelatin
Gelatin is protein obtained by boiling skin, tendons, ligaments, and/or bones with water. It is usually obtained from cows or pigs.Or if you are muslim it also has fish type.
It require one cooling step machines than others
It is the most commonly used

- Carrageenan
Carrageenan as know as agar, is an extract from a red seaweed commonly known as Irish Moss. This edible seaweed is native to the British Isles, where it’s been used in traditional cooking for hundreds of years.
It is more soft and brittle
It require less cooling but longest drying time
It bit sensitive to temperature
